The island we are living on used to be a coconut plantation so there are so many coconuts to be used! We have started to include coconut in some of our meals like making coconut rice and a fijian dish where you cook platain (cross between a potato and a banana) in coconut milk as a desert. The pineapples over here is so nice and sweet and you can pick up three pineapples at the markets for $5! This mocktail recipe is super easy and super yummy!
1 1/2 cups of fresh or canned pineapple
1 1/2 cups of coconut milk
1 tsp of vanilla essence
1 frozen banana
1 cup of ice cubes
juice of half a lemon
Blend everything together and pour into four tall glasses.
