My friend Tasmin and I made a healthy apple crumble today! Taz Is a much better chef than I am so it’s always good to cook with her cause she knows what she’s doing 😂. Lots of yummy apples around Hawkes Bay at the moment. I found a few really good websites while I was searching for healthy treats through Pinterest. https:/ Is seriously good most of the recipes are refined sugar free which I like, and the desserts look like they would be super unhealthy! I also want to try this one which is a healthy brownie recipe, these sugar free mud cakes and these pear muffins also look yummy!
We tripled the recipe because I have brothers and they eat heaps! I swear all recipes are made for a wee family of four but we have seven in our family plus there are always extras hanging around- I love it that way though it’s fun! It’s so weird being in Fiji with just me and Ben. I’m not used to the quiet and having no other people around!

My family at home is refined sugar free so I wanted to make a yummy sugar free dessert for them. The crumble is made from nuts, dried coconut, oats and coconut oil – super easy!

Apple Crumble Ingredients

Crumble Topping:

3/4 cup quinoa flakes

25 g coconut flakes

25g cashews

25 g almonds

40 g coconut oil

4 teaspoon of honey

1 teaspoon vanilla extract

1/2 teaspoon cinnamon powder



3 apples, diced, skin on

1/2 cup of water

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

Zest of half orange



1. Preheat the oven at 200C.

2. Dice the apple with the skin left on.

3. In a saucepan pour the diced apple with the water, vanilla extract, cinnamon and orange zest.

4. Cook for 15 minutes or until the apples are soft and tender

5. In a stand mixer combine all the crumble ingredients.

6. Process until it is crumbly and hold slightly together.

7. Transfer the cooked apples onto glass jar or oven ramekin.

8. Top up with the crumble mixture.

9. Bake for 25 minutes at 200C or until the crumble is golden brown
